2) Plan Your Weekend Getaways – That’s right. Grab your calendar and start booking off your weekends this summer. April is the BEST time to start booking rooms and travel. You’re likely to still find availability and a decent rate for any travel you may be planning in July or August. Once you know where you want to go, pick-up a copy of my travel bible, The New York Times 36 Hours: 150 Weekends in the USA & Canada and start going wild! I just booked a weekend trip to Yosemite National Park in August – so stoked about this.
3) Make a Kale Caesar Salad. My love affair with kale is still going strong and it’s even better in Caesar salad format. Get your hands on a baby kale mix, add Caesar dressing, cherry tomatoes, croutons or breadcrumbs, Parmesan cheese and a squeeze of lemon for a healthy weekend lunch idea. I like to add grilled chicken breast or roasted spicy shrimp on top.
