Meal Prep: Tomato + Vegetable Pasta Soup Jars

meal prep soup jarsIt’s exciting experiencing fall all over again.

We lived in Los Angeles for the past three years and haven’t been able to experience a proper fall season in awhile. I automatically have a craving for soup when the weather gets cold. Which is funny, because my craving for ice cream is truly year-round.

I’ve been trying to do more weekend meal prep lately, just so I have some healthy lunch options and don’t just default to pizza or burgers. I was inspired this month by a bunch of great meal prep recipes in Cooking Light and finally found some time to try this one out! (more…)

5 Fresh Tomato Recipes For Summer

Roasted-Tomato-Soup-Recipe

I’m starting to see tomatoes everywhere which means I’m pulling out my favourite recipes and getting ready for all that summer bounty. Here’s what I usually like to cook when I pick up a big batch of tomatoes at the farmers’ market.

Make This! Charred Tomato Salsa

I can’t get enough of this Charred Tomato Salsa. I had the pleasure of visiting The Four Seasons Scottsdale during my drive from Toronto to Los Angeles. At around 7 pm everyday, my husband and I would settle into our lounge chairs on the Onyx Bar & Lounge patio to watch the sunset.

I easily downed a few of their mixology-driven cocktails, but I kept coming back to the Charred Tomato Salsa on their lounge menu. Since tomatoes are almost in-season, I asked the Chef to share his recipe so you could get a taste for yourself.  It’s so ridiculously easy to make – (grill tomatoes on your BBQ, blend and serve) you’ll wonder why you were eating that stuff in a jar for so long! This Charred Tomato Salsa makes a great hostess gift too.
