It’s exciting experiencing fall all over again.
We lived in Los Angeles for the past three years and haven’t been able to experience a proper fall season in awhile. I automatically have a craving for soup when the weather gets cold. Which is funny, because my craving for ice cream is truly year-round.
I’ve been trying to do more weekend meal prep lately, just so I have some healthy lunch options and don’t just default to pizza or burgers. I was inspired this month by a bunch of great meal prep recipes in Cooking Light and finally found some time to try this one out! (more…)
Chicken soup has got to be one of my all-time favourite foods and this hearty bowl of homemade soup with big chewy dumplings does the trick for me. Especially on a rainy, cold day – which there are many in Portland!
I like to make a big pot at the start of the week and throw it into a cute thermos like this one if I’m heading out for day. This chicken soup is also super quick to prepare and is a great weeknight meal. The dumplings are a great way to change things up if you’re getting tired of chicken noodle soup.
If you can – source Trader Joe’s Mirepoix Mix it is such a HUGE time saver. If not, chop up 1-2 carrots, 1 yellow onion and 2 ribs of celery instead. But if you can find the mix, it’s a big timesaver! Here’s the recipe:
- 1 container of Trader Joe’s Mirepoix Mix
- 2 tbsp olive oil
- 2 bay leaves
- Salt & pepper
- 1 tsp dried thyme
- 2 boxes low-sodium, organic chicken stock
- 1 package of organic chicken breast tenders, cut into chunks
- Handful dill, chopped
I’ve been working my way through ALL the soups lately. My cold had me craving chicken noodle soup, matzo ball soup, wonton noodle soup and now we have come to this delicious healthy roasted tomato soup recipe. I found this in Shape Magazine and it’s been a staple in my recipe binder since.
If you’re heading to a farmers’ market this weekend, pick up a bunch of ripe tomatoes and whip up this batch of soup to pair with a tuna melt or grilled cheese for your Sunday night. Here’s the recipe:
Love minestrone soup?
With the Polar Vortex wreaking havoc on friends and family in Toronto and the nights getting cooler in Los Angeles, I decided it was the perfect time to warm up with a bowl of soup. I spotted this Winter Minestrone Soup recipe in Real Simple this month and did my little take on it.
Don’t stress if you don’t have every single vegetable and if you can’t find savoy cabbage – use kale instead! I also threw in some celery into my minestrone because I had a whole bunch to get rid of. I also sprinkled on some green onion and red pepper flakes for a flavour kick. This minestrone soup rings in at around 350 calories, so its healthy and chock full of vegetables – which I’m trying to eat as much of in January.
This recipe makes a huge batch! Whip it up at the start of the week and serve some up for dinner, take it to work for lunch and freeze the rest in a giant ziploc bag to enjoy on another cold winter day.
