It finally feels like summer and we just finished hosting Paul’s family at our house on the coast last week. We always throw it down with a crab dinner of some sort for our visitors with fresh cooked crab from our local seafood stand in Lincoln City, Oregon – Barnacle Bill’s.
All of the crab is local Oregon Dungeness Crab caught fresh in the Pacific Ocean that is only 5 minutes away from our house. So we hosted a crab boil last week – but without all the fuss and muss.
We bought cooked crab directly from the seafood market and put all the fixin’s together ourselves. I highly recommend doing this if you feel icky about dealing with live crabs OR if you don’t love the smell of seafood taking over your whole house.

Cinco de Mayo is right around the corner and I plan on celebrating at home with my easy beef and cheese empanadas recipe. I have always loved empanadas, but I was always too intimidated to make them at home.
Well, I finally made them and I’ll tell you my little secret – I used refrigerated pie dough for my pastry instead of making it from scratch. It cuts down on so much of the prep time! That’s why this recipe is so easy to make, you could whip it up on a weeknight. (more…)

Are you trying to eat healthier this year?
If so, I am on the same train as you then! First off, I am trying to accept that being healthy doesn’t mean I need to be PERFECT about my eating and exercise. I know there are days when I will fall off the healthy food wagon or skip a workout. I can’t let that derail my whole plan for a healthier, happier and more active lifestyle and send me down a downward spiral of cheese fries. Instead I’m choosing this eggplant dip! (more…)
