Looking for ideas for easy weeknight meals? I am WITH you!
Okay so we’ve all heard that getting back into shape is 80% diet and 20% working out right? Well, Paul and I are trying are trying to cook more because it saves money and we’re trying to eat healthier while getting into shape.
Now we LOVE eating out. We’ve probably just been doing it a little too much that we’re taking this moment to re-balance ourselves by making more of our own meals at home. It’s really hard not to eat out all the time when you live in a food city like Portland. (more…)
It’s almost the weekend!
I’ve picked out 5 healthy recipes I want to try out this weekend and thought I would share my finds with you. I’ve been trying to get into this whole meal prep thing so I can eat healthier at home, instead of caving and ordering Thai take-out when there’s nothing in the fridge. Lack of groceries and waiting until I’m absolutely starving always ends badly.
My game plan right now is to shop on Saturday and prep as much as I can for the week on Sunday. Sounds good in theory right? I know if I can get myself to do this, I will be setting myself up for success. So here are the healthy recipes I’ve picked out for the week:

For me, autumn is all about comfort food and big cozy casseroles that you can eat all week. Growing up in a Chinese household, the idea of a Tuna Noodle Casserole is still exotic for me! Rice, veggies and stir-fry were the everyday norm at my house and I didn’t really discover the wonder of creamy tuna on egg noodles and peas until my late 20s. (more…)

I am one of the laziest cooks that you’ll ever meet.
Which is why I swear by my crock pot aka slow cooker when the weather gets cold. I prep everything the night before, refrigerate overnight and then pop it into the crock pot to cook all day. It’s the working girl’s solution to delicious home-cooked food that lasts a couple days and makes your house smell awesome.
Grocery shopping this weekend? Buy everything on Sunday, do your prep and you have dinner ready for Monday night. Mondays are a weakness for me.
