I’m starting to see tomatoes everywhere which means I’m pulling out my favourite recipes and getting ready for all that summer bounty. Here’s what I usually like to cook when I pick up a big batch of tomatoes at the farmers’ market.
1) Roasted Tomato Soup
This one is so ridiculously easy. Your oven pretty much does all the work by roasting it all for you. Try to avoid putting your tomatoes in the fridge to they are ripe and juicy when you’re ready to use. Grab my recipe for Roasted Tomato Soup.
2) Egg in a Hole
Breakfast is probably my favourite meal of the day and this Egg in a Hole recipe is perfect when you have a little more time to indulge during a weekend brunch at home. Just crack your egg into a tomato circle and sprinkle with fresh basil. Check out more recipes like this from That Clean Life.
3) Roasted Tomato Salsa
4) Heirloom Tomato Salad
This is the easiest salad you will ever make. Slice up a bunch of heirloom tomatoes from the market. Drizzle with olive oil and balsamic vinegar. Sprinkle with basil pieces, and add salt and pepper. Go crazy and add some fresh mozzarella cheese or a ball of burrata.
5) Homemade Cavatelli Pasta
Chef Massimo Bruno taught me how easy it is to make homemade cavatelli pasta. It’s so simple and really lets the fresh flavours of the tomato shine through. My friend Mardi posted the recipe in her blog post on Eat. Live. Travel. Write. You will love it!
