Healthy Gourmet Green Beans


I LOVE green beans. But I rarely know what to do with them besides slathering them in butter. So in my quest to eat healthier, I came across this gourmet green beans recipe from Shape magazine that I absolutely can’t get enough of. If spot green beans out at a farmers’ market this week, make sure to pick up a batch for this easy & healthy recipe.

Here is my step-by-step pictorial for easy gourmet green beans. I have made this recipe for friends/family and for special occasions. It’s always a big hit and a fancy way to dress up your vegetables or for Thanksgiving dinner. Thoroughly rinse off 1 lb. of green beans and prepare homemade vinaigrette recipe.


Trim the ends off of the green beans and bring water to a boil


Lay out your pitted dates


Toast up the slivered almonds in a hot frying pan. Shake and stir every once in awhile to make sure the nuts are not burning.


Give the dates a rough chop up while the almonds toast up


Cook the green beans in boiling water 30 seconds at a time in small batches. Look for when they turn bright green. Dunk your hot green beans into a cold ice water bath for 30 seconds to stop the cooking process. Pat dry and set aside in a serving bowl.


Warm 1/3 cup of your homemade vinaigrette to a simmer in a large pan. Once heated, add the green beans to warm through. Transfer back to your serving dish and toss with almonds, orange segments, shallot and dates to combine. Add salt to taste and drizzle with more warm dressing, sprinkle with chopped almonds and paprika before serving.

I like serving this dish with a side of thick, crusty bread and some Manchego cheese. Get a little fancier by frying up sliced chorizo sausage and mixing up a pitcher of sangria. Enjoy!
