8 Slow Cooker Recipes To Try This Fall

The cool weather is finally here and with schedules getting busier, I’ve been pulling out my slow cooker more often. Paul and I have been prepping up 6-8 different recipes once a month and putting them in the freezer. I use this crock pot here.

It’s been great to have these on hand to whip a quick and healthy weeknight meal without all the prep and clean-up. Usually all I have to do is create a side dish like rice, steamed broccoli or salad and we have dinner and lots of leftovers for lunch the next day!

Here’s a round-up of a few of our favourite slow cooker recipes to try this week. If you can, prep a bunch of these on a Sunday, throw them into freezer bags and you’re good to go!

1) Curried Chicken Crock Pot Stew

I am a BIG FAN of Abigail’s recipes over at That Clean Life and this is by far one of my favourites. Two chicken breasts stretches out to almost 6 meals worth of food! This curried chicken stew is packed full of veggies and you can eat it on its own or serve over quinoa, rice or with naan bread.

2) Slow Cooker Baked Beans

I loved baked beans out of a can, but it’s even healthier when you make that home! Which means no corn syrup, excess sodium count or preservatives. This super easy recipe is perfect on a chilly night with some toast and hot dogs for a retro meal in.

3) Steak Carnitas Bowls

If you have a hankering for Mexican food – this Steak Carnitas Bowl from Erin at Platings and Pairings will do the trick. It’s made with lean flank steak that cooks slowly for 8 hours and you simply shred it with a fork. Add your favourite toppings and you’re done!

4) Chicken & Corn Chowder

I’m all about soups, stews and chili with the weather getting cooler. Having lived in LA for the past three years and now Portland – I’m finally experiencing seasons again! So bring on the comfort food with this Chicken & Corn Chowder recipe from Damn Delicious. It’s everything I want after a cold and rainy day.

5) Slow Cooker Mashed Potatoes

Canadian Thanksgiving is right around the corner, which got me all thinking about mashed potatoes and gravy. This super easy version from Sisters What! makes your slow cooker do all the hard work and all you gotta do is show up at the end with a hand blender and Greek yogurt. DONE.

6) Pulled Pork Sandwiches

Serve this sweet shredded pulled pork on a sesame egg bun, a handful of chips and a pickle spear for comfort food perfection. I usually add a bottle of my favourite beer to the mix to soak in. Top with coleslaw.

7) Cuban Braised Beef & Peppers with Rice

I love anything with avocados and this slow cooker braised beef pairs well with crunchy peppers. The smooth texture of avocado makes me do my happy dance. Serve over white or brown rice and sprinkle with fresh cilantro.

8) Slow Cooker Beef Enchiladas

If you’re looking for something easy and low-maintenance, bust out the slow cooker and try this Beef Enchiladas recipe from Canadian Living’s New Slow Cooker Favourites.

Serve up your beef enchiladas with a crisp side salad, pack up the extra for lunch the next day or freeze the leftovers.
