In my quest to find more healthy lunch ideas, I have rounded-up a few of my favourites that you can whip up quickly or travels well if you are looking for lunch ideas for work.
A great trick is to double the recipe and make two days worth – as long you don’t mind repeats. It saves you a lot of thinking and stress of having to pack a lunch every single night.

Roasted Carrot + Spinach Quinoa Bowl – I could eat this hot or cold. Just roast up a huge batch of vegetables at the start of the week and divide into containers. Add a piece of grilled or rotisserie chicken on top for added protein for a filling and healthy lunch idea.
Vegetable Quiche + Salad – I make 2 quiches at a time. One to eat during the week and one for the freezer for future use. It’s great for breakfast or lunch, just re-heat in the microwave at work and pack a side green salad.
Kale Quinoa Fritters with Tangy Avocado Sauce – I love whipping up a big batch of these quinoa and kale fritters and putting them in my freezer. To cook them, I just grill them with a bit of coconut oil and serve on a big leafy spinach salad with some tangy homemade avocado dip. This recipe from That Clean Life is also gluten-free and vegan!
Crescent Roll Tuna Melts – I can’t resist a good tuna melt and this delicious recipe from A Beautiful Mess is one I make all the time. Take tuna, cheese and roll it up in some store-bought crescent roll dough and bake. You can reheat the rolls at work and serve with a crunchy salad.
Coconut Kale Strawberry Salad – I eat a lot of kale. It’s practically it’s own food group in Southern California and I can’t seem to get enough of this dark leafy green. This kale salad includes strawberries, cashews and coconuts in a honey-lime dressing. The longer the salad marinates – the better it tastes!
Pesto Pasta Salad with Grilled Chicken – If you’re looking for something hearty that holds up well, this amazing pasta salad from Spiced! will do the trick. It’s so very easy to make and you can use store-bought pesto and either grill your own chicken or sub in rotisserie chicken from the store.
Lunch Bento Box – I think variety is the spice of life and these genius lunch bento boxes from Back to Her Roots are truly inspiring.
