The worst part of my work week is packing a daily healthy lunch. Too many times, I open my lunch bag and I’m repulsed by what I prepared. It’s boring or bland. On other days, I don’t bother to make lunch at all.
I asked Registered Dietician Allie McLaughlin from Nutrition Meets Life for some healthy lunch ideas that are also easy. Here’s how to transform a mid-day meal into a noon hour feast:
Avocado on Toast: Bring half an avocado in your lunch bag. Slice the avocado and tomato, and add it to whole wheat toast or crackers.
Mini Pizza: This is my favourite healthy lunch idea because it’s so easy and delicious. Pack grated mozzarella cheese, tomato sauce, and any toppings that you want. Throw everything onto a whole wheat English muffin and put into the microwave or toaster oven.
Sushi Pockets: Sushi is a healthy lunch fave – but at $6-10 a meal, it can weigh on your wallet. Homemade sushi may seem overwhelming, but really, this recipe is easy.
In a bowl, gently mix avocado, tomatoes, cucumber, carrots, pepper, green onion, radish, lemon juice, salt and pepper. Combine with cooled rice and a vegetable mixture. Use brown rice for an extra healthy addition. Transfer to a sealed container and pack for work along with the nori (dried seaweed).
When you’re ready to eat at the office, cradle a square of nori in your hand to make a pocket, and spoon in the sushi mixture.
Mozzarella & Tomato Salad: Instead of paying $10-15 in a restaurant, make this simple salad recipe yourself. Chop some fresh roma tomatoes, and top with part-skim mozzarella, spinach, and homemade dressing. Bon appétit!
